Roasted Granola – another recipe to cook codependency away

Granola buffet I adore granola and searched for years to find a recipe that had the perfect balance of crunch, sweetness and texture. I often play around with ingredients by omitting some and including others. It works brilliantly with any combination – the full on version or the basic. Whenever I served it at a wedding weekend breakfast buffet, it was always the first dish to disappear.

  • 2 cups oats
  • 1 cup All-bran flakes
  • 1 cup pecans
  • 1 cup skinned hazelnuts
  • 1 cup flaked almonds
  • 1 cup dried cranberries
  • 1 cup raisins
  • 1/2 cup sesame seeds
  • 1/2 cup poppy seeds
  • 1 cup coconut
  • 1/2 cup butter
  • 1 cup honey

Pre-heat oven to 350 degrees. Melt butter and honey in a large pot. Add the rest of ingredients and mix well. Grease a sheet pan and spread with mixture. Bake for 20-30 minutes tossing gently after 15 minutes. Allow to cool. Delicious with plain Greek yogurt.

Another idea is to make it as a cute dinner party gift and wrap it in a terracotta pot.
