Persimmon and arugula salad – another recipe from Abuse ends when you love yourself

persimmon salad One of my favorite restaurants in LA is Gjelina on Abbot Kinney. It was here that I was introduced to this wonderful combination of simple ingredients. Any of your favorite dressings will work – I just love the flavor of champagne vinegar.

  • Persimmon, sliced
  • arugula
  • feta cheese

Champagne vinegar dressing

  • 1 cup canola oil
  • 1\2 champagne vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons mustard powder
  • 1 teaspoon Dijon mustard

Whisk ingredients together. Lightly coat arugula with dressing. Place on a plate with persimmon slices and scatter with feta cheese.
